Strawberry Walnut Salad with Fried Goat Cheese
This is a salad that I have been working on all summer. At the start of the summer I had a really light and wonderful dandelion greens salad at Hundred Acres in NYC. This salad started with that inspiration and has turned into something that I really love.
All of the flavors of this dish are powerfully individual but all come together so complimentary. The bitterness of the greens with the tart sweetness of the strawberries, the savoriness of the walnuts and the sweet and fragrant orange blossom honey - the essence of the sour lemon… did I forget to mention the warm and gooey chevre goat cheese that both creamy and crunchy. This dish is truly an explosion of flavors and textures in your mouth.
I would really recommend trying to get this dish out soon as strawberry quality will drop in the approaching fall and winter (however I found these incredibly sweet ones at Whole Foods today).

Recipe: Strawberry Walnut Salad with Fried Goat Cheese & Orange Blossom Honey Dressing

Ingredients: Salad
3 cups dandelion greens or wild arugula
1/3 cup walnuts, broken into small pieces
4 large strawberries, cut thin slices
4 ounces Chevre Goat Cheese
1/4 cup Canola oil
1/4 cup Panko bread crumbs
1/4 cup plain bread crumbs
1 large egg, beaten
1/4 cup all purpose flour
Ingredients: Dressing
1 part Orange Blossom Honey
1 part lemon juice
3 parts olive oil
salt & pepper to taste
Directions:
Combine Greens, walnuts, strawberries in a bowl. For the dressing, whisk all ingredients together and pour over salad… mix gently.
Put oil in small frying pan and put on medium heat. Mix the panko and plain bread crumbs together and plate it. Beat the egg and plate that. Pour flower onto a plate. Cut the goat cheese into disks, cover in flour, dip in egg (make sure its fully covered), and then dip and cover in bread crumbs. Carefully place the cheese disc into the hot oil - brown on each side and then place on paper towel when done. Do this 6 times to make six discs - 3 for each plate. When finished, plate the salad and place three cheese discs on each plate.
Serve and enjoy!

Whole foods market just got a fresh shipment of strawberries so I bought some and made this, using dandelion greens instead of arugula and minus the fried goat cheese since I was fresh out but it still tasted very yummy. I thought without adding the fried goat cheese this time, it made it a very refreshing cold salad. If you can, your choice of an agua fresca drink is a great addition.
Hi Edison, I complete agree with you. This is such a versatile salad - you can switch around ingredients, leave things out, add something new and its still refreshing. An agua fresca would be great with it… will have to give it a go next time. And I just picked up fresh strawberries at Whole Foods today and am planning to make strawberry rhubarb hand pies - hopefully they’ll be up on this site soon! Thanks so much for trying and writing!

Speaking of English Strawberries… my husband is English and every time we go to England in the summer, I NEED to have strawberries there. They are just so sweet and flavorful!
when i was in Paris i ate a salad just like this, but they made it with a hazelnut vinaigrette and didn’t fry the goat cheese (but that does look amazing!)…i think it would definitely compliment this salad well! thanks for the recipe i cannot wait to try it!
