Cucumber Farro Risotto with Steamed Salmon

Farro is a whole wheat that is usually found dry and then cooked like a pasta.  I can’t possibly explain how much I love this little grain and how often I use it as its applications are somewhat endless.  If you are someone who has never tried farro, I plead with you to try it.  It is so delicious.  Farro has incredible flavor and texture and can be eaten cold or hot.  While it is a healthy ingredient, it doesn’t taste “healthy”.... [Read More...]

Poached Egg Salad with Sherry Shallot Vinaigrette

Sometimes it’s the simple things that are the best, and that couldn’t be more true than with this salad.  Paired with a bright and tangy vinaigrette, this dish is well rounded and balanced… perhaps one of my favorites! I could really eat this dish every day and not get sick of it.  I wonder if anyone else will have this same obsession? Poached Egg Salad with Sherry Shallot Vinaigrette Recipe by: Natalie Emerson Serves: 2 12... [Read More...]

Bo Luc Lac - Vietnamese-Style Beef

This dish was very refreshing. It was also easy to make in very little time. Instead of using tenderloin, I used sirloin, and instead of using watercress, I used baby mache. I did not feel that the changes altered the deliciousness of this dish at all. And when it was all done and plated, I reserved the left over juices/sauce from the pan to use on another day to go with dumplings. If you a looking for a low-carb, quick to make dinner, this... [Read More...]

Sole Meuniere with Avocado Salad

This is a very healthy dish that literally takes 15 minutes start to finish. In fact, its one of those recipes where there isn’t a need to follow the recipe. Read it once, and you’ll be able to make it over and over again. It has incredibly well rounded flavors, and while it’s light, it very filling. This is one of my favorite week-night dinners.  The sole recipe is from Ina Garten. I have added the avocado salad myself and found... [Read More...]

Roasted Salmon Nicoise Platter

Ladies Lunch (cont.) … As I discussed earlier, yesterday I had lunch at my friend, Christina Sethi’s, house. Our other friend Amanda was there as well, and we had a wonderful day of cooking and eating. While we were all baking, Christina made this beautiful lunch for us. It is an Ina Garten recipe and its simplicity truly let all of  the ingredients shine. The marinade on the salmon made it pop and the champagne vinaigrette was a... [Read More...]

Frisee Aux Lardons with Poached Egg

A little while back I had dinner at The Waverly Inn. I had ordered a salad with lardons and a warm vinaigrette with a poached egg on top. It was the perfect way to start a colds night dinner there (that and the truffle macaroni and cheese… side-note: Amazing!). The salad was simple yet complete, and I have thought back to it a few times craving it. On another day I was reading through my Dean & Deluca Cookbook for inspiration and what did... [Read More...]

Strawberry Walnut Salad with Fried Goat Cheese

This is a salad that I have been working on all summer. At the start of the summer I had a really light and wonderful dandelion greens salad at Hundred Acres in NYC. This salad started with that inspiration and has turned into something that I really love. All of the flavors of this dish are powerfully individual but all come together so complimentary. The bitterness of the greens with the tart sweetness of the strawberries, the savoriness of the... [Read More...]

Tandoori Hamachi with Pickled Cucumber Salad

Part of learning how to cook, is of course, making it practical for my day to day life. You’ll notice that most of the time, I am cooking recipes that are fairly easy to make. Through this learning process, I have realized that in order for something to taste really really good, it does not have to be entirely complex in its preparation and creation. The other part to this is that it doesn’t have to be entirely unhealthy either.    It seems... [Read More...]

Burrata & Prosciutto Salad

I have made this salad twice - the first in a large portion for dinner, the second as an appetizer for brunch. Both times, it was an incredible hit. What makes this dish so fantastic is truly its simplicity and complexity (you’ll  understand that contradiction once you’ve tried and tasted it).  Did I forget to mention its also quick and easy to make! I found this recipe on a website I love called Just One Plate. It is a wonderful site, one... [Read More...]

Indian carrot & lamb salad

Tonight was dinner alone for me, and I wanted to have something light but balanced. I also didn’t want it to take a long time to make. I often DVR certain TV Shows and save them for a time when I can later watch them. I have the entire series of Jamie at Home with Jamie Oliver DVR’d. One episode was solely on carrots, and he made this dish rather quickly. It seemed easy enough and looked good. I realized that this would be perfect for tonight.   And... [Read More...]
